Good Better Best Taco Meatballs

Yes, you heard me correctly...taco meatballs. What could be Better than a combo of a taco and a meatball? Do you want to know the Best part? You can pull this together in less than 30 minutes. Honestly, probably closer to around 20 minutes if you are really Good. Honestly, the other night Hockey Guy and I came home from math tutoring at 7:45p.m. and I had these on the table at 8:15 p.m. That speedy prep time included my chatting with Running Daddy and asking him oh so nicely to move away from the open refrigerator door so that I could get in there and get the ingredients.

So if school has started or is starting and you are wondering what to make for dinner in these first few weeks, Good Better Best has you covered with this easy, healthy and oh so Good recipe. You might even have all the ingredients on hand at this moment.


-1 lb ground turkey (you could also use ground chicken or beef)
-2 eggs
-2 Tbs taco seasoning
- 1/2 cup shredded cheddar cheese


-Preheat the oven to 425 degrees
-Line two baking sheets with foil and spray with cooking spray
-In a bowl combine the ground turkey, eggs, taco seasoning and cheese until well mixed
-Drop golf ball sized amounts of the mixture onto the baking sheet. I do not even roll them.
-You will have about 24 meatballs when you are finished

-Bake for about 15 minutes until they reach an inner temperature of 165 degrees with a meat thermometer.

Scoop meatballs onto your plate and enjoy with all of your favorite taco fixings. We did black beans and salsa but you could also add in: guacamole, sour cream, pinto beans, cilantro rice, chopped cilantro etc.

To make Better use one element of beans (already a whole grain), organic ground turkey, free range eggs and organic fixings. To make Best use multiple elements of these ingredients.

  2. These look delish! How yummy would these be in a taco soup with beans and corn and topped with crushed tortilla chips? Or, how about rolled in a lettuce wrap or corn tortilla drizzled with a chipotle sauce? The Fraz Four will definitely be giving these a try! (Could you crush tortillas and add to the original mix...a filler for firmness like adding breadcrumbs to Italian meatballs?)
